Setting an infinity pool on the rooftop of the newly minted Bisha was something of a given, but we’re especially pleased the Toronto hotel opted to make room on the 44th perch for this light-washed restaurant.

Here in a sprawling room bounded by potted palms and floor-to-ceiling windows that look out over the CN Tower and Lake Ontario, Studio Munge has created what it modestly calls a ‘reimagined coastal paradise’ – think blonde wood furniture, creamy banquettes, a head-turning wall of pop art photographs and, dripping from the tessellated timber ceiling, looping tangles of lamps that recall a futuristic jungle canopy.

 All this is a canny backdrop to chef Ben Heaton’s bright menu of Californian and Mexican flavours by way of the Baja Peninsula – for example little neck clams bathed in a warm mezcal broth scented with lime, and sesame-encrusted ahi tuna, simply grilled and served with a yuzu butter sauce.
